It's The Night Before Christmas!

Sugar Cookies
It’s the night before Christmas and all through the house,
The smell of sugar cookies are baking;
So Santa can snack on them,
Before leaving your home.

Ok so it didn't rhyme..LOL
Try this delicious and easy recipe for sugar cookies that I got from the Food Network, Alton Brown. It is yummy and easy.
Sugar Cookies
Ingredients:
3 cups of all-purpose flour
¾ teaspoon of baking powder
¼ teaspoon salt
1 cup of unsalted butter soften (2 sticks)
1 cup of sugar
1 egg beaten
1 tablespoon of milk
Powdered sugar for rolling out the dough

Making the dough:
1.       Start by sifting the flour, salt and baking power together in a separate bowl- put to the side
2.       In a mixer, mix the sugar and butter together until they are completely combined.
3.       Slowly add the beaten egg and milk.
4.       While mixer is on slow, start to incorporate the flour, salt and baking powder that you previously sifted together. You should not add the entire thing at once. I would add it in 4 parts.
5.       Once the mixture is combined it should start to pull away from the sides of the bowl.

After the dough has been formed, you will take the ball and divide in half. Each ball should be then wrapped in wax paper placed in the refrigerator for 2 hours to chill.

At this point, pre-heat the oven to 375 degrees:
After you dough has chilled: dust the counter and rolling pin with powdered sugar. Roll out the dough until about ¼” thick. Use your favorite cookie cutters to cut out shapes.

Baking:
1.       Place your cookie shapes on a greased baking sheet. You will bake for about 3 ½ minutes and rotate the pan. Continue to bake for another 4 minutes.
2.       Once the edges start to turn golden brown, the cookies are done.
3.       Take out of the oven and allow them to cool.
You can cool on your counter top or to speed up, I suggest placing in the refrigerator for 10 minutes. You need them to cool so that the cookie maintains its shape.

Now you can decorate with icing or dip in chocolate.
